  1. Take a Kadhai or Pan, add half Cup Oil into it heat for 2 min then Fry Eggplant or Baigan cut into Cubes into it, fry on a medium flame for 5 to 7 min and keep aside..
  2. Then in the same Kadhai or Pan again pour half Cup Any Cooking Oil heat for 2 min then add Panchforan and Green Chillies into it heat for 2 min, add Onion fry for 2 to 3 mins and add Turmeric Powder..
  3. Afterward, add Tomatoes Cut into Cubes Cook for 5 to 7 min to Cook then lastly add Fried Eggplant or Baigan, salt as per taste fry for 5 to 7 min..
  4. Your Pyaji Baigan is Ready to Enjoy hot with Any Roti or Chapati,Garnish with Green fresh Coriander..
